With the help of family, she created Amedei, named in honor of her maternal grandmother.  Listen as Cecilia recounts her global search for authentic, indigenous cocoa beans. See, smell and touch the beans themselves, which she has carefully selected and imported from plantations all over the globe.  Admire the collection of rare chocolate making machines dating back to the late 1880’s, which Cecilia has thoughtfully and inventively combined with modern technology to create her award winning chocolate. Cocoa beans are native to the Amazon region and were already being cultivated for domestic use by pre-Colombian cultures such as the Mayans 4,000 years ago.  Cocoa trees grow in hot rainy tropical areas near the equator, with 70% of the world’s production coming from the west coast of Africa. Cecilia Tessieri seeks out the best plantations and cocoa beans from the most authentic “Cru” plantings around the world.  She aims to work with agricultural expertise and environmental consciousness at all times. She carefully selects all the beans which then arrive at her factory in Tuscany in their traditional jute bags.  The chocolate making process in the factory includes refining, roasting and conching. Amedei’s chocolates are Kosher certified and gluten free, using only pure cocoa butter. Recently there has been global scientific research into chocolate’s effect on human health, with results pointing to several areas where chocolate makes a positive contribution.  All of this is good news for chocolate lovers and producers alike, which Cecilia Tessieri sums up in Amedei’s mission: “to make the world a little sweeter, one bar at a time.”
