Your plunge into the coffee tasting experience starts as you head down to the CaffèLab with your personal expert guide.  You are introduced to coffee beans from around the world and you learn the importance of the arabica plant and its place in Italian coffee.   Identify the sweet note of Mexican beans, the spicy taste of Ethiopian Sidamo, the full-bodied richness of Indonesian and many other varieties.  Learn the tricks of the true baristas as you are trained in the fine art of making the perfect caffè and cappuccino, with the great machine rumbling beneath your hands and the pressure of the steam building as you go...

Feel the heat of the gigantic roaster on your skin as specially selected beans are carefully toasted to perfection in one kilogram batches.  It is here that you become vested in the importance of the roasting process, the heart and soul of a good Italian caffè. Comprehend the patience needed to properly cool the beans after the roasting,  before they can be correctly blended and ground. Watch closely as the experts choose the appropriate packaging for each batch, depending on the requests of the clients and demands of the market. And finally it is time to taste.  Your guide has the same skills in this coffee tasting workshop as a sommelier has in a wine tasting event. Scents and tastes are all discussed and evaluated and as you are taught the professional terms used by expert coffee tasters around the world.  You will practice the correct “cupping” technique and how to tell a good coffee apart from a bad one, a special blend from a common commercial coffee. Temperature and milk foam have never been so fascinating as you witness the expert prepare the coffees in a myriad of ways.  Learn to speak the language of foam and understand what each grade of foam indicates. At last, put your hands to the machine and follow the carefully choreographed movements of the coffee maestros as you attempt to prepare the perfect espresso and cappuccino on your own. For your final exam, engage all your new knowledge and create your own blend to be specially packaged for your trip home, giving your old cup of java a whole new awakening.
